How can I synchronize my iCloud contacts, appointments, etc. with Exchange?
First of all, it wouldn't be necessary, as you already have a data store in Exchange with which you can synchronize all your devices. All you need to do is configure your Exchange server on the devices using ActiveSync. ( Apple writes the following about this: Set up Exchange ActiveSync on your iPhone, iPad or Apple Vision Pro – Apple Support (UK) )
However, if you still have an urgent use case to synchronize your iCloud data with Exchange, for example because you also want to connect the iCloud to an Android or Windows Phone device, then I can recommend the Outlook add-in OLMixedFolders, which acts as a bridge to the corresponding folders.

If you have opted for the Exchange variant without iCloud, you may now want to synchronize your public Exchange folders to the devices as well and find out that this is not possible by default. Here I can also offer you OLMixedFolders as a bridge, even better would be ExMixedFolders, as it can access Exchange directly.

Update 26.11.2023: In the current version of ExMixedFolders there is a task that can synchronize CalDav with Exchange calendars via EWS or Microsoft Graph (Beta). This job now also makes it possible to synchronize iCloud calendars.
